Beef with Shredded Coconut | Dendeng Ragi


Ingredients:

  • 500 g Beef, fat and sinew removed
  • 1/2 tablespoon Coriander powder
  • 2-3 tablespoons Brown sugar
  • 1 teaspoon Tamarind
  • 1 teaspoon Salt
  • 1 Coconut, skin removed, shredded
  • 2 Salam or bay leaves
  • 1 stalk Lemon grass, bruised
  • 75 g Brown sugar

Finely Pounded Spices Into Paste:

  • 1 tablespoon Coriander, roasted
  • 1 teaspoon Tamarind
  • 5 cloves Garlic
  • 5 Shallots
  • 1 tablespoon Chopped galangal

How To:

  • Slice beef and tenderize by pounding with the back of a knife.
  • Mix beef with coriander powder and sugar, and knead until thoroughly mixed.
  • Simmer over low heat until the juices are absorbed and the beef is tender.
  • Set aside.
  • Boil all the ingredients and spices paste except the beef and brown sugar in 250 cc water until the water is absorbed.
  • When shredded coconut turns golden brown, add brown sugar and beef.
  • Stir until beef is completely covered with coconut.
  • Serve.
