Chicken Curry West Sumatra Style | Kalio Ayam


Ingredients :

  • 1 chicken, cut into 8 pieces
  • 1ooo ml coconut milk
  • 1 turmeric leaves
  • 1 stalk fresh lemon grass
  • 3 kaffir lime leaves
  • 1 tbsp tamarind juice / asam kandis juice

Spices :

  • 4 tbsp red chilies
  • 2 tbsp sliced shallots
  • 2 tsp sliced turmeric
  • 1 tsp sliced ginger
  • 1 1/2 sliced galangal
  • 1 tsp coriander
  • 1 1/2 tbsp salt

How to make :

  1. Boil the coconut milk over medium heat.
  2. Blend all spices into a paste. Put the paste, turmeric leaf, lemon grass, kaffir lime leaves, and tamarind juice into the boiling coconut milk, and continue cooking.
  3. Stir well until the coconut milk turns oily. Add the pieces of chicken and continue cooking until done and the sauce turns thick.
  4. Transfer to a serving bowl and serve with rice.
