Chicken In White Coconut Sauce | Opor Ayam


Ingredients :

  • chicken, cut into pieces
  • 3 tbsp oil
  • 1000 ml coconut milk
  • 2 salam leaves / bay leaves
  • 1 stalk lemon grass
  • 2 kaffir lime leaves
  • Fried sliced shallots

Spices :

  • 1 tbsp sliced shallots
  • 1 1/2 tbsp sliced garlic
  • 6 candlenuts
  • 1 tsp coriander
  • Pinch of cumin
  • 1/2 white pepper
  • 1 tsp salt
  • 1/2 tbsp brown sugar
  • 1 tbsp sliced galangal

How To Make :

  1. Blend all ingredients in spices into a paste. Put oil in a pan, saute the paste over medium heat. Add salam leaves, lemon grass, and kaffir lime leaves. Stir fry until fragrant.
  2. Add the chicken, cook for a few minutes and pour the coconut milk and stir well until cooked.
  3. Serve and scatter with fried sliced shallots.
