Crispy Fried Chicken, Central Java Style | Ayam Kremes


Ingredients :

  • +/- 700 g chicken, halved
  • 2 salam leaves / bay leaves
  • 500 ml water
  • 1 egg
  • 5 tbsp tapioca flour

Spices :

  • 1 tbsp sliced shallots
  • 1 tbsp sliced garlic
  • 1 tsp sliced ginger
  • 1 tsp sliced turmeric
  • 1 tsp sliced galangal
  • 1/2 tsp coriander
  • 5 candlenuts

Sambal Ingredients :

  • 2 tbsp sliced shallots
  • 1 tsp shrimp paste
  • 2 tbsp sliced red chilies
  • 50 g tomatoes
  • 1/2 tsp salt
  • 2 tbsp oil

Garnish :

  • Cucumber
  • Tomatoes
  • Lettuce

How to make :

  1. Blend all spices into a paste.
  2. Put water in a pan, add chicken and half portion of the paste and salam leaves, bring to boil until the chicken becomes tender.
  3. Heat oil in a frying pan, deep fry the chicken. At the same time, mix the remaining paste with tapioca flour and egg.
  4. Pour the mixture into the chicken being fried until the better become crispy.
  5. Put in a serving dish, serve with sambal and garnish with raw vegetables.
  6. To make sambal : blend all sambal ingredients into a paste. Put oil in a pan and saute the paste until done.
