Crispy Fried Chicken, Central Java Style | Ayam Kremes

Ingredients :
- +/- 700 g chicken, halved
- 2 salam leaves / bay leaves
- 500 ml water
- 1 egg
- 5 tbsp tapioca flour
Spices :
- 1 tbsp sliced shallots
- 1 tbsp sliced garlic
- 1 tsp sliced ginger
- 1 tsp sliced turmeric
- 1 tsp sliced galangal
- 1/2 tsp coriander
- 5 candlenuts
Sambal Ingredients :
- 2 tbsp sliced shallots
- 1 tsp shrimp paste
- 2 tbsp sliced red chilies
- 50 g tomatoes
- 1/2 tsp salt
- 2 tbsp oil
Garnish :
- Cucumber
- Tomatoes
- Lettuce
How to make :
- Blend all spices into a paste.
- Put water in a pan, add chicken and half portion of the paste and salam leaves, bring to boil until the chicken becomes tender.
- Heat oil in a frying pan, deep fry the chicken. At the same time, mix the remaining paste with tapioca flour and egg.
- Pour the mixture into the chicken being fried until the better become crispy.
- Put in a serving dish, serve with sambal and garnish with raw vegetables.
- To make sambal : blend all sambal ingredients into a paste. Put oil in a pan and saute the paste until done.
