Grilled Fish with Manggo Sauce | Ikan Panggang Sambal Mangga


Ingredients:

  • 2 Pomfret fish @ 300gr, cleaned
  • 1 tbs lime squash
  • 1 tsp salt

Glaze:

  • 3 tbs sweet soy sauce
  • 1 tbs salted butter, melted
  • 2 clove garlic, finely pounded
  • 1/2 tsp salt
  • 1/2 tsp ground pepper

Mango sauce:

  • 1 young mango fruit, shredded
  • 2 lime leaf
  • 1 tomato, sliced

Finely pounded spices inti paste:

  • 5 red chilli
  • 12 red bird eye chilli
  • 3 shallots
  • 1 tsp shrimp paste
  • 1 tsp salt

Additional:

  • kaffir lime
  • Kemangi

How to:

  • clean the fish, baste with lime squash and salt.
  • Heat 2 tbs oil and saute spices paste with lime leaf until fragrant.
  • Add mango and tomatoes, stir well.
  • Glaze the fish and grill until done.
  • Ready to serve. Serve grilled fish with mango sauce and kaffir lime and kemangi.
