Madura Rice Porridge | Bubur Manggul


Ingredients :

  • 2000 ml coconut milk
  • 200 g rice flour
  • 1 tbsp salt
  • 4 pandanus leaves
  • 3 tbsp oil
  • 400 ml coconut milk
  • 250 g shrimps, peeled
  • 1 tbsp sugar
  • 1 tbsp salt
  • 1 salam leaf / bay leaf
  • 1 stalk lemon grass, bruised
  • 2 kaffir lime leaves

Spices :

  • 2 tbsp sliced red chilies
  • 3 tbsp sliced shallots
  • 2 tbsp sliced garlic
  • 1 tbsp sliced galangal
  • 1 tsp shrimp paste

How To Make :

  1. To make porridge : in a bowl, mix rice flour with small amount of coconut milk.
  2. Place the remaining coconut milk in a pan, bring to boil, add salt, pandanus leaves and rice flour mixture, stir well until smooth and thick, set aside.
  3. To make sauce : blend all spices into a paste. In a frying pan put iol, saute the paste until fragrant, add salam leaves, shrimps, lemon grass and kaffir lime leaves, pour the coconut milk, add sugar and salt, mix well, bring to boil until the sauce becomes thick.
  4. To serve : place the porridge in a bowl and pour the sauce over it.
