Milkfish Cooked With Red Chilies | Bandeng Bumbu Bali


Ingredients:

  • 750 g milkfish, cut as desired
  • 3 tsp oil
  • 100 g minced tomatoes
  • 2 kaffir lime leaves
  • 2 tbsp sweet soy sauce
  • 200 ml water
  • Oil for deep frying

Spices:

  • 3 red chilies, boiled
  • 1 tbsp sliced garlic
  • 1 tsp sliced ginger
  • 3 candlenuts
  • 1 tsp salt
  • 1 tbsp palm sugar

How to make:

  1. Wash the fish and drain. Fry in hot oil until golden and done, remove from the oil and drain.
  2. Blend all spices into a paste and saute with oil in a pan over medium heat.
  3. Add tomatoes and kaffir lime leaves, stir well and pour-in water.
  4. Add the fish and sweet soy sauce. Simmering at low heat until the sauce turns thick, remove from the heat.
  5. Transfer into a serving dish and serve.
