Rice Cook In Coconut Milk | Nasi Uduk

Ingredients :

  • 400 g rice
  • 800 ml coconut milk
  • 2 tsp salt
  • 4 salam leaves/bay leaves
  • 1 stalk lemon grass, bruised

Spices :

  • 150 g fried peanuts
  • 1/2 tbsp sliced red chili
  • 10 capsicums
  • 1 tsp sugar
  • tbsp vinegar
  • 150 ml boiled water

Side Dishes :

  • Fried chicken
  • Sliced omelettes
  • Sliced cucumber
  • Sliced tomatoes
  • Sweet basil leaves

How To Make :

  1. Boil the coconut milk, salam leaves, lemon grass and salt together.
  2. Put the rice into the boiling coconut milk, stir thoroughly until the liquid evaporates. Remove from the heat and let stand for a few minutes.
  3. To make peanut sauce : blend the fried peanuts and all the spices into a paste, dilute this peanut paste with boiled water.
  4. Serve : scope the rice into a serving dish, arrange fried spiced chicken, sliced omelettes, sliced cucumber, sliced tomatoes, sweet basil, and peanut sauce in a separate cup.
  5. Beat the eggs, add wheat flour and tofu, mix well.
  6. In a non-stick pan out oil, make 8 tofu omelettes over medium heat, set aside.
  7. Arrange the tofu omelette on a serving dish, bean sprouts on top, scatter with fried shallots and celery, and accompaniment with sauce.
  8. To make the sauce : blend garlic, salt, capsicums, and peanuts. Pour water, mix well. Add black shrimp paste (optional) and soy sauce, set aside.
