Steamed Fish Meat Wrapped In Banana Leaves | Otak-otak Ikan


Ingredients :

  • 200 g mackerel meat, blended
  • 50 ml cream coconut milk
  • 75 g tapioca flour
  • 1 egg
  • 2 tbsp chopped green onion
  • Banana leaves

Spices :

  • 4 tbsp sliced shallots
  • 1 1/2 tbsp sliced garlic
  • 1/2 tsp pepper
  • 1 tsp salt
  • 1 tsp sugar

Peanut Sauce :

  • 50 g peanuts
  • 1 tbsp sliced garlic
  • 1/2 tbsp sliced red chilies
  • 20 g sugar
  • 1 tsp vinegar
  • 150 ml cooked water
  • 1/2 tsp salt
  • Oil for frying

How to make :

  1. Blend all spices into a paste. Mix the paste with blended fish. Add egg, green onion, cream coconut milk, salt and tapioca flour. Mix well until smooth. Divide the mixture into 10 portions.
  2. Put each portion of the mixture on a sheet of banana leaf or alluminium foil. Roll and wrap tightly and bring to steamer over medium heat about 15 minutes.
  3. Remove from steamer and continue grilling in an oven or charcoal until the banana leaf turns dry.
  4. Arrange on a serving dish and serve with peanuit sauce.
  5. To make the peanut sauce : fry peanuts, red chilies, and garlic. Blend this mixture into a paste and add cooked water, sugar, vinegar, and salt, mix well.
