Steamed Glutinous Rice Filled With Spicy Fish In Banana Leaves | Lalampa

Ingredients :

  • 500 g glutinous rice
  • 600 ml coconut milk
  • 1/2 tbsp sugar
  • 1 tsp salt
  • 3 pandanus leaves
  • 2 stalks lemon grass
  • Banana leaves and bamboo strips
  • 300 g smoked tuna, shredded
  • 250 ml coconut milk
  • 5 tbsp sliced red chilies
  • 1 tsp salt
  1. Put glutinous sugar, salt, pandanus leaves and lemon grass in a pan. Pour coconut milk and bring to boil over medium heat and stir until the liquid absorbed.
  2. Transfer the half-cooked glutinous rice to a steamer and continue steaming until cooked, set aside.
  3. To make filling : in a pan put the smoked fish, chilies, coconut milk, and salt. Bring to boil over medium heat until dry, set aside.
  4. On a sheet of banana leaf, put 2 tbsp glutinous rice, flatten and put a spoonful of the filling in the center, roll up in the banana leaf, tie on both ends with bamboo strips. Grill or bake until cooked, ready to serve.
