Steamed Rice Flour Cup Cake | Talam Ebi


Ingredients  a :

  • 125 g rice flour
  • 350 ml boiling water
  • 50 g sugar
  • 75 g tapioca flour
  • 250 ml coconut milk
  • 1/2 tsp salt

Ingredients  b :

  • 75 g rice flour
  • 75 g tapioca flour
  • 25 g sugar
  • 250 ml cream coconut milk
  • 1/2 tsp salt
  • 1/2 tsp vanilla

Ingredients  c :

  • 50 g dried shrimp, soaked, drained
  • 3 tsp sliced garlic
  • 1 tsp sliced kaempferia galanga
  • 2 kaffir lime leaves
  • 1 tbsp red chilies
  • 1 tsp sugar

How To Make :

  1. Mix rice flour with boiling water, set aside, take 75 gram of dough.
  2. In a bowl, mix well remaining dough with tapioca flour, sugar, salt and coconut milk in ‘a’ , and then sieve. Pour the dough in porcelain cups about 1/2 part of the cup and steam for 10 minutes.
  3. Mix the other 75 g dough with tapioca flour, sugar, coconut milk, salt and vanilla in ‘b’ , mix well and sieve.
  4. After the first dough has been cooked, pour the second dough on top and steam again for 10 minutes.
  5. Remove from the heat and let cool then take out from the porcelain cup and sprinkle with the spicy dry shrimps.
  6. To make spicy dry shrimps : mix all ingredients in ‘c’ , blend and roast until dry.
