Tofu Omelette With Peanut Sauce From Surabaya | Tahu Telur Surabaya


Ingredients :

  • 400 g tofu, small cubed
  • 4 eggs
  • 50 g wheat flour
  • 1 tsp salt
  • Oil for frying
  • 4 tbsp fried shallots
  • 4 tbsp finely chopped celery
  • 200 g bean sprouts, blanched
  • 100 peanuts, fried
  • 8 tbsp sweet soy sauce
  • 200 ml cooked water
  • 1 tbsp fried garlic
  • 5 capsicums
  • 1/2 tsp salt
  • 1 tbsp black shrimp paste, optional

How To Make :

  1. Marinate the tofu in salt water. Deep fry the tofu until golden, drain and set aside.
  2. Beat the eggs, add wheat flour and tofu, mix well.
  3. In a non-stick pan out oil, make 8 tofu omelettes over medium heat, set aside.
  4. Arrange the tofu omelette on a serving dish, bean sprouts on top, scatter with fried shallots and celery, and accompaniment with sauce.
  5. To make the sauce : blend garlic, salt, capsicums, and peanuts. Pour water, mix well. Add black shrimp paste (optional) and soy sauce, set aside.
