Wrapped Gold Fish | Ikan Mas Woku


Ingredients :

  • 1000 g gold fish
  • 2 limes
  • 1 tsp salt
  • 4 tbsp sliced green onion
  • 5 kaffir lime leaves
  • 2 turmeric leaves
  • 5 stalk lemon grass, bruised (white part)
  • 50 g sweet basil
  • 2 tbsp oil
  • Banana leaves or aluminium foil

Spices :

  • 1 1/2 tbsp sliced garlic
  • 3 tbsp sliced shallots
  • 6 tbsp sliced red chilies
  • 1 tsp sliced ginger
  • 1 tsp sliced turmeric
  • 7 candlenuts

How To Make :

  1. Clean the fish, slit down the middle and remove the inside. Marinate fish in salt and lime juice for 30 minutes.
  2. Blend all spices into a paste, put in a wok, and saute with oil. Add lemon grass, kaffir lime leaves, sweet basil, turmeric leaves, and green onion, stir well until fragrant. Remove from heat. Season the fish with these spices.
  3. On a sheet of banana leaf or aluminium foil, put the spicy and wrap tightly.
  4. Grill on a charcoal on in an oven until done, remove from banana leaf and transfer into a serving dish and serve.
